Mexican Chilli Chocolate Chip Ice Cream

INGREDIENTS

  • ½ glass milk
  • 1 dry red chilli deseeded
  • 1 cup dark chocolate grated
  • 1 vanilla pod slit
  • 5 to 6 mint leaves chopped
  • 1 egg
  • 1 egg yolk
  • 1 cup caster sugar
  • 3 tbsp mint mojito syrup
  • 2 to 3 tbsp white chocolate chips
  • 3 tbsp whipped cream

HOW TO PREPARE MEXICAN CHILLI CHOCOLATE CHIP ICE CREAM

    Pour milk into a hot pan on low flame. Add a deseeded red chilli grated dark chocolate, one slit vanilla pod and a few mint leaves. Mix them well and let the milk boil. Strain the chocolate mixture into a bowl and set it aside to cool. In another bowl, take a whole egg and one egg yolk. Mix it with caster sugar. Keep this bowl on the top of a double boiler and mix it using a whisker. Mix the egg sugar mixture with the chocolate mixture. To add flavour to the ice cream, add a little mint mojito syrup. Add some white chocolate chips and whipped cream as well and mix it. Fill the mixture in an aluminium/steel container and refrigerate for nearly one hour. Later, remove it and blend it again for 30 seconds in a mixie. Pour the mixture again into the container and refrigerate it again for another hour. Once frozen your chilli chocolate chip ice cream is ready to serve.
