Most people look at milk as a source of calcium. However, apart from milk, there's a fruit, melon, which is rich in calcium. Chef Gautam Mehrishi shares a unique soup recipe that allows you to combine melon in the most flavourful way in your meal. Try the Melon Soup with Lemon Lentils recipe. It never fails to impress.
In a heated pan, add olive oil, finely chopped garlic, shallot onions and let it roast. Add salt as per taste, turmeric powder and stir it. Add chopped squash, zucchini and mix it again.
Peel the melon and extract the seeds from it. Add the chopped melon wedges and saute it on the high flame. Add vegetable stock and let it cook. Add honey to the cooked soup.
Add the soup in a bowl and blend it well. Add the soup again in the pan and let it warm.
For preparing lemon lentil, in a pan add soaked split brown lentil, salt as per taste, coriander powder, lemon juice, coriander & mint leaves and stir it. Add slices of lemons and toss it. Add a pinch of red chilli powder, roasted cumin powder and toss it again.
Serve the soup with lemon lentils and garnish with fried onions and microgreens.
