Mediterranean Stuffed Bell Peppers

The colourful bell peppers lend vibrancy to several dishes. Chef Pankaj Bhadouria uses bell peppers as main ingredients to make Mediterranean Stuffed Bell Peppers. The stuffing made of rice, Greek seasoning and feta cheese is delicious and tasty.

INGREDIENTS

  • 1/2 tsp black pepper powder
  • 1 tsp cumin powder
  • 1 tsp garlic powder
  • 1 tsp greek oregano
  • 1/2 tsp salt
  • 1 tsp paprika powder
  • 1 cup rice
  • 3 bell peppers
  • 1 cup sun-dried tomatoes
  • 1 cup garlic
  • 4 tbsp olive oil
  • 1 cup spring onion greens
  • 1/2 red boiled kidney beans
  • 1/2 cup crushed walnuts
  • 1/2 block feta cheese

HOW TO PREPARE MEDITERRANEAN STUFFED BELL PEPPERS

    In a bowl, add black pepper powder, cumin powder, greek oregano, garlic powder, salt, paprika powder and mix it well.

    In a bowl, add rice, water and soak it for 30 minutes. Boil the rice.

    Chop the top part of the bell pepper. Deseed it and cut the stem. Add the sun-dried tomatoes and garlic in a jar and blend it. Add olive oil and prepare a fine paste.

    Add feta cheese, olive oil and mix it well. Stuff the mixture in bell pepper and add it in the baking dish. Add olive oil, feta cheese and bake it in the oven at 175'C for 15 - 20 minutes.
