INGREDIENTS

  • For Marinade :500 gm yam parboiled
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 3 tbsp oil
  • 1 wedge lemon juice
  • 1 ½ tbsp oil for frying
  • salt for seasoning
  • For Masala : 2 tsp oil
  • 1 tsp mustard seeds
  • 4 to 5 Red chillies slit
  • 6 to 5 curry leaves
  • 1 tsp chopped coriander
  • black pepper powder to taste
  • salt to taste
  • For Sauce: 2 tbsp mayonnaise
  • Yam fried curry oil
  • ½ tsp red chilli powder
  • For Garnish: Red chilli powder
  • Curry leaves and red chillies

PREPARATION

    Cut the boiled yam in the style of French fries. Marinate the chopped yam with salt, a pinch of turmeric powder, red chilli powder, oil and lemon juice. Heat a oil in a pan. Sear the marinated yam until both sides become crisp. Once fried transfer it to a bowl. To make the masala, heat a little oil in another pan. Add little mustard seeds slit red chillies and a few curry leaves. Add a little oil used for frying the yam. Mix these well with the fried yam crushed black pepper and and chopped coriander. Once mixed with the masala, transfer it to a serving plate. For the sauce, take a mayonnaise in a bowl. Mix the yam fried oil and some red chilli powder with it. Serve the masala yam fries with this mayonnaise sauce. Sprinkle some red chilli powder on the fries and garnish with curry leaves and red chillies used for the masala.
