Heat oil in a kadai. First the spices: Use cumin seeds ginger paste, red chilli powder, curry leaves, salt, garam masala powder, turmeric powder and salt. Then come the veggies: Chop some tomatoes, onions, carrots, potatoes, green and red bell peppers, coriander and green chillies and add it to the masala mix in the kadai. Finally, add the semolina, oats, water, curd and lemon juice. Mix all the ingredients well. Place the lid on the kadai and allow the oats to cook for 2 to 3 minutes. For salsa: In a mixing bowl, add diced mangoes, salt, crushed black pepper, chopped green chilli, lemon juice and olive oil. Place the prepared oats into a bowl and serve it with this salsa dip. Garnish the oats with ghee and a sprig of coriander leaf. Top off the salsa dip with fried papad.
