INGREDIENTS

  • FOR Soup
  • 2 tbsp Olive Oil
  • 150 gms Sweet Potato (Peeled And Diced )
  • 1 no Onion (Medium)
  • 200 gms Lamb (Boneless)
  • to taste Salt
  • ½ tsp Crushed Black Pepper
  • 5 to 6 Cherry Tomatoes
  • 200 ml Vegetable Stock.
  • FOR Dumplings
  • 1 cup Pumpkin Puree
  • to taste Salt
  • 1cup Flour
  • 1 tsp Baking Powder
  • 2 tbsp Olive Oil

HOW TO PREPARE MAORI SOUP

    For Soup ,In a stock pan warm2 tbsp Olive oil,1 sliced onion and sauté till light brown.

    Add 200 gms lamb loin, salt, 150 gm diced potatoes, crushed black pepper, 5-6 cherry tomatoes and fry.

    Add 200 ml vegetable stock and let the soup boil.
  4. 4

    For Dumplings ,In a bowl add 1 cup pumpkin puree, salt, 1 cup refined flour, 1 tsp baking powder, 2 tbsp olive oil and bring the dough together to make small dumplings Place the strainer in the stock pot and poach the dumplings in the soup.

    In a pan warm 2 tbsp olive oil, add dumplings, thyme and sear dumpling till they get caramelized crust.

    In two serving bowl add 50 gms watercress each followed by dumplings and soup.
  7. 7

    Garnish Maori Boil with chopped spring onion.
  8. 8

    Maori Soup is ready to be served.
