Mangalore Bonda

INGREDIENTS

  • FOR Batter
  • 1 cup refined flour
  • 2 to 3 tbsp pumpkin puree
  • 2 tbsp coconut
  • 2 tbsp sugar powder
  • Salt
  • 1 tbsp coriander leaves
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • ½ cup milk
  • 2 tsp oil
  • FOR Pumpkin Stir Fry
  • 1 tbsp oil
  • ¼ cup onions
  • 7 to 8 curry leaves
  • 2 tbsp peanuts
  • 3 to 4 mint leaves
  • 1 cup pumpkin cubes
  • 2 to 3 tbsp coconut
  • 2 to 3 tbsp pumpkin puree
  • ½ cup milk
  • Salt
  • Black pepper

HOW TO PREPARE MANGALORE BONDA

    For the bonda: In a mixing bowl add chopped onions, chopped green chillies, chopped coriander leaves, salt, red chilli powder, refined flour and baking powder.

    Mix it well and allow it to rest for 2 to 3 minutes.

    Heat oil in a Kadai.
  4. 4

    Make small balls from the prepared mixture and deep fry them.
  5. 5

    Fry until they turn golden brown.
  6. 6

    For the grilled pineapple: Melt butter in a pan.
  7. 7

    Add pineapple slices.
  8. 8

    Sprinkle salt powdered sugar, crushed black pepper and red chilli powder.

    Grill them on both the sides.

    For the plating: Place a banana leaf on a plate.

    Place the grilled pineapple over it and then put the bonda over it.
  12. 12

    Fill a piping bag with beaten egg and decorate it on the bonda.

    Sprinkle red chilli powder and garnish it with coriander leaves.
