INGREDIENTS

  • For chicken wing
  • 1 tbsp fennel seeds
  • 1 tsp brown sugar
  • salt
  • 2 tsp coriander seeds
  • 5 to 6 star anise
  • 5 to 6 nugmate and mace
  • 3 to 4 springs of thyme
  • 3 to 4 springs of rosemary
  • 2 tsp cinnamon powder
  • ½ lemon zest
  • 2 tsp olive oil
  • 1 tsp paprika powder
  • 4 to 6 chicken wings
  • ½ cup orange juice
  • 2 tbsp brandy
  • 1 tbsp soya sauce
  • For marination
  • 2 tsp brown sugar
  • 4 tbsp orange juice
  • 3 tbsp honey
  • 2 tbsp sherry vinegar
  • For parsley sugar
  • 2 tbsp dried parsley
  • 2 tbsp brown sugar

PREPARATION

    In a motar and pastel add fennel seeds, brown sugar, salt, coriander seeds, star anise, nugmate and mace, springs of thyme, springs of rosemary, cinnamon powder, lemon zest and coarsely grind.

    Add paprika powder and pound again.

    In a bowl add marinate chicken wings with spice rub.
  4. 4

    Add orange juice, brandy, soya sauce and mix well.

    Skew in metallic skewer.

    Take oil in pan, add brown sugar, in another bowl add brown sugar, orange juice, honey, 2 tbsp sherry vinegar and mix well.

    Keep bosting the glaze over broiling wings.

    Mix dried parsley, brown sugar and mix well.
  9. 9

    Serve with springs of thyme, springs of rosemary, nutmeg mace, parsley sugar, caramelize glaze.
