INGREDIENTS

  • For kachori
  • 2 cups wheat flour
  • 2 tbsp butter
  • ½ cup oil
  • salt
  • ½ tsp aniseed powder
  • a pinch clove powder
  • a pinch cinnamon powder
  • ½ cup black gram paste
  • For mutter
  • 1½ tsp butter
  • oil
  • 1 tbsp ginger garlic paste
  • ½ tsp ginger
  • 1 cup boiled white chickpeas
  • 1 tsp degi mirch powder
  • 1 tsp all spice powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp green chillies
  • 2 tbsp tamarind chutney
  • ¼ cup green chutney
  • water
  • 2 tbsp coriander leaves
  • ½ cup curd
  • For garnish
  • 1 cucumber
  • 1 coriander spring

PREPARATION

    In a mixing bowl add wheat flour, butter, oil, aniseed powder, clove powder, cinnamon powder, soaked black gram paste and salt.

    Mix it well until it forms a dough. Allow it to rest for 30 minutes.

    Once the dough is set, make small dough balls from the dough.
  4. 4

    Roll the small dough balls into a disc shape and deep fry them in oil.
  5. 5

    For the mutter: Melt butter in a Kadai. Add ginger garlic paste chopped ginger, boiled white chickpeas, degi mirch powder, garam masala powder, coriander powder, cumin powder, chopped green chillies, tamarind chutney, green chutney and water. Mix them well .

    Add chopped coriander leaves and curd. Mix well and transfer it into a mug.

    Serve the prepared mutter with kachori and sliced cucumber.
