Lomo Saltado
A Peruvian stir fry that typically combines onions, tomatoes, mushrooms and bell peppers with Peru's signature Aji Amarillo chilli paste.

  • 2 inch Fresh Ginger
  • 2 tsp Soy Sauce
  • 2 tsp Aji Amarillo Chilli Paste
  • 1 Onion
  • 1 Red Bell Pepper
  • 1 Tomato
  • 10 to 12 Mushrooms
  • 1 tsp Cumin Powder
  • 1 tsp Vinegar
  • 1 Spring Onion
  • 2 tbsp Olive Oil.

    Heat oil in a pan, sauté mushrooms till it caramelize and remove it in a bowl.

    Sauté chopped ginger, sliced onion, bell pepper and tomato in the same pan then add soy sauce, ajiamarillo paste, cumin powder and fry.

    Add mushrooms once the heat is turned off.
  4. 4

    Add Vinegar and shredded spring onion.
  5. 5

    Serve LomoSaltado with pickled cucumber, French fries and sliced onion.
