Litti Chokha

Litti Chokha is a popular traditional dish from Bihar and Jharkhand. In this rustic delicacy shared by Chef Ranveer Brar, Litti or wheat flour balls stuffed with a hearty filling of sattu along with kalonji (Nigella Seeds) and achar paste are cooked in copious amount of clarified butter and served with Chokha made of mashed potatoes. You will enjoy the flavours that come through as you eat this amazing dish.

INGREDIENTS

  • 1 cup wheat flour
  • ½ tsp ajwain (Carom Seeds)
  • salt to taste
  • water as required
  • 1 tbsp clarified butter
  • 1 cup chana sattu (chickpea sattu)
  • ½ tsp kalonji (nigella seeds)
  • 1 tbsp achar paste
  • ½ onion
  • 1-2 tbsp mustard oil
  • coriander leaves
  • 2 green chillies
  • 1 tbsp clarified butter
  • 1 piece of coal chokha
  • 4 boiled potatoes
  • 2 tbsp mustard oil
  • 1 onion
  • coriander leaves
  • 2 green chillies
  • 2 garlic cloves
  • clarified butter
  • mustard oil

HOW TO PREPARE LITTI CHOKHA

  1. 1

    Make a dough with wheat flour, carom seeds, salt and clarified butter.
  2. 2

    For filling, combine Chana sattu, finely chopped onion, coriander, green chilli, nigella seeds and achar paste.
  3. 3

    Stuff this mixture in the dough and cook these balls (Litti) in a cooker with clarified butter.
  4. 4

    In a bowl, mash potatoes and mix them with mustard oil, chopped onion, coriander, green chillies and garlic.
  5. 5

    Now roast the Littis on gas and pour clarified butter over them.
  6. 6

    Serve hot with mashed potato Chokha.
