INGREDIENTS

  • 1 cup rice
  • 1 sliced onion
  • 3 to 4 slit and chopped green chillies
  • Fresh sliced ginger with finely chopped
  • 3 to 4 tbsp oil
  • 1 tsp mustard seeds
  • 8 to 10 curry leaves
  • 1 tsp urad dal
  • 1 tsp chana dal
  • ½ tsp turmeric powder
  • ½ tsp asafoetida
  • ½ tsp lemon zest
  • 1 tsp lemon juice
  • Fresh finely chopped coriander
  • salt to taste
  • water
  • For Garnish: Coriander sprig
  • Lemon wedge.

HOW TO PREPARE LEMON RICE

    Take some rice in a bowl.

    Wash it and strain the excess water off.
  3. 3

    Pour water in a pan and add rice to boil.
  4. 4

    Add some salt in the rice.
  5. 5

    When cooked strain the excess water from the rice.
  6. 6

    Slice an onion.
  7. 7

    Slice the green chillies and then finely chop them.
  8. 8

    Slice the ginger and then chop it finely.
  9. 9

    Heat oil in a pan.

    Add some mustard seeds.
  11. 11

    When the seeds splutter add some curry leaves, urad dal, chana dal, chopped green chillies, ginger and sliced onion.

    Add a little turmeric powder and asafoetida.

    Add rice to this masala and mix.

    Add some lemon zest and a little lemon juice to the rice mixture.
  15. 15

    Add a little salt and chopped fresh coriander and mix again.

    Transfer the lemon rice to a plate.
  17. 17

    Garnish it with coriander sprig and lemon wedge.
