Take some rice in a bowl. Wash it and strain the excess water off. Pour water in a pan and add rice to boil. Add some salt in the rice. When cooked strain the excess water from the rice. Slice an onion. Slice the green chillies and then finely chop them. Slice the ginger and then chop it finely. Heat oil in a pan. Add some mustard seeds. When the seeds splutter add some curry leaves, urad dal, chana dal, chopped green chillies, ginger and sliced onion. Add a little turmeric powder and asafoetida. Add rice to this masala and mix. Add some lemon zest and a little lemon juice to the rice mixture. Add a little salt and chopped fresh coriander and mix again. Transfer the lemon rice to a plate. Garnish it with coriander sprig and lemon wedge.
