INGREDIENTS

  • FOR The Cake
  • 1 cup refined flour
  • 1 tsp baking powder
  • 125 gm butter
  • 1 cup caster sugar
  • 3 eggs
  • 1 tsp vanilla essence
  • ½ cup milk
  • salt to taste
  • FOR The Chocolate Sauce
  • 1 cup icing sugar
  • 1 cup cocoa powder
  • 1cup waterboiled
  • 1 tbsp butter
  • 1 cup desiccated coconut

HOW TO PREPARE LAMINGTONS

    To a bowl add refined flour, baking powder and salt. Strain the flour add castor sugar to the mixture and blend it in a mixer. Add egg and vanilla essence and milk and fold the batter to make it soft again. Add some refined flour and mix it well. 5 Line the baking tray with butter paper and pour the mixture and smooth out. Bake in a pre heated oven at 180 C for 20 to 25 minutes. Make the chocolate sauce by mixing cocoa powder, icing sugar, butter and boiling water. Mix well and the chocolate sauce is ready. Remove the cake from the oven, allow it cool and cut it into small cubes. Dip the cubes in chocolate sauce and coat them well. In a separate bowl, take desiccated coconut and dip the cubes into it. Your lamingtons are ready to be served.
