INGREDIENTS

  • For Fish: 2 basa fish
  • 1 chopped onion
  • 1 tsp chopped ginger
  • 3 to 4 soaked red chillies
  • 1 tsp crushed garlic
  • 2 tsp tamarind paste
  • Salt
  • 2 tsp Worcestershire sauce
  • Few coriander leaves
  • 1 spring onion greens
  • For Sauce: 1 chopped celery
  • 4 shallots sliced
  • 3 red chillies soaked and deseeded
  • 1 tbsp garlic crushed
  • 1 tbsp oil
  • 1 tsp ginger
  • 1½ tbsp tamarind paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp fish sauce
  • 2 to 3 spring onions
  • 1 banana stem
  • coriander leaves
  • Red chilli

PREPARATION

    For the marinade chop onion, ginger, fresh and soaked red chillies, and garlic. Blend well. Add tamarind paste, salt, and worcestershire sauce. Grind again. Marinate the fish with the prepared marinade. On a banana leaf, place the marinated fish, cilantro, and spring onion greens and wrap the leaf. Steam the wrapped fish. For the sauce, heat oil in a pan. Add chopped ginger garlic, shallots, soaked and deseeded red chillies, celery, tamarind paste, worcestershire sauce, honey, and fish sauce. Mix well. To the steamer, add spring onions and chopped banana stem. Let them steam with the fish. Serve the fish with steamed onion and banana stem and sauce. Garnish with coriander leaves and a red chilli.
