INGREDIENTS

  • water as required
  • salt as required
  • 2 potatoes
  • 1 sweet potato
  • 200 gm pumpkin
  • 2 raw bananas
  • 200 - 250 gm ash gourd
  • 1 tbsp chana dal
  • 1 tbsp coriander seeds
  • 1/2 tsp fenugreek seeds
  • 5 dried red chillies
  • 1 cup grated coconut
  • 1 1/2 cup toor dal
  • 1 tsp turmeric
  • 2 tsp tamrind paste
  • 150 - 200 gm cluster beans
  • 200 - 250 gm fava beans
  • 2 tbsp ghee
  • 1 tbsp urad gota
  • 10 - 12 curry leaves
  • 1/2 tsp asafoetida

PREPARATION

    Boil water in a pot and add salt, chopped potatoes, sweet potatoes, chopped pumpkin, raw banana, ash gourd and cook.

    Dry roast chana dal, coriander seeds, fenugreek seeds, dried red chillies and grated coconut in a pan until they turn light brown.

    Grind the roasted spices with water to make a paste.
  4. 4

    Pressure cook the toor dal with turmeric for two whistles.
  5. 5

    Add the tamarind paste, cluster beans, fava beans, spice paste, boiled dal to the potato pot and mix well.

    Heat ghee in a pan and add mustard seeds, urad gota, curry leaves and asafoetida. Pour the tempering over the Koottu.

    Kottuu is ready to serve.
