INGREDIENTS

  • 1 cup Refined flour
  • 1 tsp baking soda, Salt to taste
  • 1 tsp oil, crushed black pepper
  • ½ cup Water
  • 1 yellow zucchini
  • 1 green zucchini
  • 1 eggplant, Oil for frying
  • FOR garnish
  • Olive oil
  • parsley

HOW TO PREPARE KOLOKITHI

    In a bowl, mix the refined flour, baking soda, salt, and black pepper with water.

    Slice the yellow zucchini, green zucchini, and eggfruit.

    Deep-fry all the vegetables in the batter.

    In a separate bowl, mix the salt, and black pepper, and oil.

    Pour dip into a bowl and add the olive oil.

    Garnish with the parsley.

    Place the veggies on tissue paper; remove the excess oil and arrange them in a bowl with the dip.
