INGREDIENTS

  • 1 tbsp Olive Oil
  • 2 tsp chopped Garlic
  • 2 tsp chopped Ginger
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp All Spice powder
  • 2 cups vegetable stock
  • 1 cup Red Thai curry paste
  • 2 tbsp Gelatine powder
  • ½ cup water
  • 1 tbsp Xanthan Gum
  • For Vegetable Mixture 1 tsp Sunflower Oil
  • 2 tsp chopped Garlic
  • 2 tsp chopped Ginger
  • 1 cup chopped and Blanched mix vegetable
  • Salt to test
  • Black Pepper powder to test
  • 1 tsp All Spice powder
  • 1 cup cooked Rice
  • 1 Black Tofu
  • 1 Orange segments
  • Micro greens

HOW TO PREPARE KOKIS

    In a bowl, mix 1½ cups rice flour, 300 ml coconut cream, 2 tsp sugar and 1 tsp turmeric powder to a thick pouring consistency, adding more coconut cream if needed to adjust consistency, let it rest for 15 minutes, Heat oil in a pan for frying and heat the Kokis mould in oil, dip the mould in the batter till it coats half of the mould, Fry the kokis till it becomes firm, carefully remove kokis from mould with a thin wooden stick into the oil, remove the fried kokis from oil.

    For Serving place the kokis on a serving plate and sprinkle icing sugar on top Kokis is ready to be served.
