Kofta Masur Pulav

Kofta Masur Pulav is a traditional meat and lentil preparation from Uttar Pradesh. Chef Ranveer Brar shares the traditional recipe using a modern appliance, pressure cooker, that brings down the cooking time.

  • 2 cinnamon sticks
  • 3 black cardamoms
  • 2 bay leaves
  • 1/2 tsp black pepper
  • 1 Green Chilli
  • A small piece of ginger
  • 1/2 kg meat
  • salt and water
  • 1/2 kg meat mince
  • 1 tbsp ginger garlic paste
  • 3/4 tsp red chilli
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Coriander leaves
  • 3 tbsp ghee
  • 1 tsp cumin seeds
  • 1 finely chopped onion
  • 1/2 tbsp turmeric
  • 1/4 cup whole masoor
  • 1 cup rice
  • 1/4 tsp mace powder
  • 1/4 tsp cardamom powder
  • 1/4 tsp nutmeg powder
  • 1 tsp black pepper

    Heat water in a cooker, add cinnamon, black cardamom, bay leaf, black pepper, green chilli, ginger, salt.

    Pressure cook the spices to make yakhni.
  3. 3

    In a bowl, mix minced meat, ginger garlic paste, salt, red chilli powder, cumin powder and coriander powder.
  4. 4

    Make small meat balls and cook them in the pressure cooker in the yakhni for 5 to 7 minutes.
  5. 5

    Strain the yakhni using a muslin cloth and separate the meat balls.
  6. 6

    Heat ghee in the pressure cooker and add cumin, chopped onions and saute till the onions turn pink.
  7. 7

    Add salt, turmeric, red chilli powder, masoor and soaked rice and mix well.
  8. 8

    Add the yakhni, meat balls and pressure cook the rice for 3 to 4 whistles.
  9. 9

    Sprinkle some chopped mint leaves, coriander leaves, cardamom powder, nutmeg powder, black pepper powder and Kofta Masur Pulav is ready to serve.
