INGREDIENTS

  • 3 Green Kiwi Fruit
  • 2 tbsp Olive Oil
  • 1 tbsp finely chopped ginger
  • 1 Onion
  • to taste Salt
  • ½ Red Bell Pepper
  • ½ ellow Bell Pepper
  • ½ Green Bell Pepper
  • ½ tsp Crushed Black Pepper
  • as required Water
  • 1stalk Coriander/Dhaniya Patte
  • 1 stalk Spring Onions/Hara Pyaaz
  • ½ tsp sugar
  • 30 gms Shredded Cheese
  • 30 gms Bread Crumb
  • 3 Green Kiwi Fruit
  • 2 tbsp Olive Oil/Jaytun Ka Tel
  • Fresh Coriander Sprigs.

HOW TO PREPARE KIWI RATATOUILLE

    In a wok warm olive oil add 1 tbsp chopped ginger, 1diced onion and salt to taste.

    Add diced kiwi, ½ yellow, green and red diced bell peppers, salt, ½ tsp crushed black pepper and sauté.
  3. 3

    Sprinkle water to deglaze the pan.
  4. 4

    Add chopped coriander, one stalk spring onions and 1/2 tsp sugar.
  5. 5

    Place the cooked vegetables into a baking mould, add shredded cheese and cover it with fresh bread crumbs.

    Bake ratatouille at 170 degree for 10 minutes.
  7. 7

    Garnish with fresh coriander sprigs.
  8. 8

    Ratatouille is ready to be served.
