Kiwi Ratatouille

Chef Ranveer Brar shares a recipe for kiwi fruit-based savoury dish Kiwi Ratatouille. In this recipe, the Chef uses a mixture of kiwi fruit, bell peppers, spring onions and shrimp. This baked dish sprinkled with grated cheese is divinely comforting.

INGREDIENTS

  • 3 green kiwi fruit
  • 2 tbsp olive oil
  • 1 tbsp finely chopped ginger
  • 1 onion
  • salt
  • ½ red bell pepper
  • ½ ellow bell pepper
  • ½ green bell pepper
  • ½ tsp crushed black pepper
  • water
  • 1 stalk coriander/dhaniya patte
  • 1 stalk spring onions/hara pyaaz
  • ½ tsp sugar
  • 30 gm shredded cheese
  • 30 gm bread crumb
  • 3 green kiwi fruit
  • 2 tbsp olive oil/jaytun ka tel
  • fresh coriander sprigs

HOW TO PREPARE KIWI RATATOUILLE

    In a heated pan, add olive oil, chopped ginger, onion and saute.
  2. 2

    Add salt as per taste, chopped kiwi and toss it.
  3. 3

    Add chopped yellow, red and green bell pepper and toss it.
  4. 4

    Add salt as per taste, crushed black pepper, water and mix it.
  5. 5

    Add coriander leaves, spring onions and toss it.
  6. 6

    Add sugar and mix it. Add the mixture in a baking tray.
  7. 7

    Add shredded cheese, bread crumbs and bake it in the oven at 170'C for 10 minutes.
  8. 8

    Garnish with coriander leaves and serve.
