Kiwi Lemonade & Anzac Cookies
New Zealand's famous Anzac cookies now served with a refreshing Kiwi Lemonade.

  • FOR Kiwi Lemonade
  • 2 Kiwi Fruit (Sun Gold)
  • 1 Kiwi Fruit (Green)
  • 1 tbsp Lemon Juice
  • 1 inch Ginger
  • Few sprigs Fresh Mint Leaves
  • 1 tbsp Sugar
  • 300 ml Aerated Water
  • 200 ml Water
  • .
  • FOR Anzac Cookies
  • 125 gms Flour
  • 1 Cup Oats
  • 1 Cup Desiccated Coconut
  • 150 gms Sugar
  • ½ Cup Butter
  • 1 tbsp Golden Syrup
  • ½ tsp Baking Soda

    For KIWI LEMONADE:{Peel and chop 2 kiwi fruits.
  2. 2

    In a large jar, put the chopped kiwi, add 1 tbsp lemon juice, 1 inch lightly crushed ginger, fresh mint leaves and muddle them.

    Add 300 ml aerated water and 200 ml plain water, refrigerate the lemonade and serve chilled.

    For ANZAC COOKIES:{In a bowl mix 125 gms flour, 1 cup oats, 1 cup desiccated coconut and 150 gms sugar.

    Melt ½ cup butter in a pan and add 1 tbsp golden syrup, pour melted butter liquid over dry ingredients.

    Warm water in the same pan and use it for making a tight dough.
  7. 7

    Line a baking tray with butter paper, make small balls of dough and put them on baking tray keeping distance between cookies, bake for 160°Cfor 10-12 minutes.

    Take the cookies out from oven and rest for few minutes before removing from the tray.
  9. 9

    Anzac Cookies are ready to be savoured.
