FOR THE NOODLES:
Boil water in a non-stick pot and add noodles.
Cook the noodles until it is soft.
Remove it onto a plate.
Heat oil in a Kadai.
Add chopped onions, kimchi, vegetable broth, egg mixture (break an egg into a small bowl, add salt and black pepper powder, and beat the egg), spinach leaves, coconut milk, lemon juice, salt and black pepper powder.
Mix it well and cook till the soup thickens.
Pour the soup over the cooked noodles and garnish the soup with coriander leaves.
