INGREDIENTS

  • For Khichdi Risotto
  • 1 tbsp oil
  • 1 sliced onion
  • 1 tsp garlic crushed
  • 1 tbsp chopped ginger
  • 1 tsp cumin seeds
  • 1 tbsp black peppercorns
  • ½ tbsp turmeric powder
  • 1½ cups rice
  • soaked Salt
  • Water
  • 2 cups vegetable stock
  • 1 cup soaked split green gram
  • For Accompaniment
  • 1 chopped onion
  • 1 cup dry shrimps
  • 1 tsp coconut oil
  • 2 green chillies chopped
  • Coconut powder
  • ½ tsp cumin powder
  • Salt

PREPARATION

    Heat oil in a pan. Add cumin seeds black peppercorns, chopped onion, garlic, ginger, turmeric powder, soaked rice, salt, vegetable stock, and soaked split green gram. Mix well. Cover and let it cook. In another pan, roast dry shrimps with coconut oil and coconut powder. In a bowl, combine the roasted dry shrimp mixture with chopped onion, green chillies, cumin powder, and salt. Serve khichdi risotto with dry shrimp mixture, lady s finger chips, and bitter gourd chips. Garnish with coriander sprigs.
