INGREDIENTS

  • FOR Khichdi Risotto
  • 1 tbsp oil
  • 1 sliced onion
  • 1 tsp garlic crushed
  • 1 tbsp chopped ginger
  • 1 tsp cumin seeds
  • 1 tbsp black peppercorns
  • ½ tbsp turmeric powder
  • 1½ cups rice
  • soaked Salt
  • Water
  • 2 cups vegetable stock
  • 1 cup soaked split green gram
  • FOR Accompaniment
  • 1 chopped onion
  • 1 cup dry shrimps
  • 1 tsp coconut oil
  • 2 green chillies chopped
  • Coconut powder
  • ½ tsp cumin powder
  • Salt

HOW TO PREPARE KHICHDI RISOTTO

    Heat oil in a pan.
  2. 2

    Add cumin seeds black peppercorns, chopped onion, garlic, ginger, turmeric powder, soaked rice, salt, vegetable stock, and soaked split green gram.

    Mix well.
  4. 4

    Cover and let it cook.
  5. 5

    In another pan, roast dry shrimps with coconut oil and coconut powder.
  6. 6

    In a bowl, combine the roasted dry shrimp mixture with chopped onion, green chillies, cumin powder, and salt.

    Serve khichdi risotto with dry shrimp mixture, lady s finger chips, and bitter gourd chips.
  8. 8

    Garnish with coriander sprigs.
