INGREDIENTS

  • 2 tsp oil
  • 1/2 tsp cumin seed
  • ½ tps fenugreek seeds
  • 1 - 2 kashmiri dry red chilli
  • 2 tsp chopped ginger
  • 1 tsp turmeric powder
  • salt
  • ½ tsp red chilli powder
  • 250 gm pumpkin
  • water
  • 3 tsp gaggery
  • 4 to 5 tbsp tamarind paste
  • 1 tbsp fresh coriander leaves

PREPARATION

    Heat oil and add, fenugreek seeds, kashmiri dry red chilli, chopped ginger, turmeric powder, salt and red chilli powder.

    Add pumpkin cubes and saute.
  3. 3

    Water as needed and cook the pumpkin.
  4. 4

    Add jaggery, tamarind paste and saute.
  5. 5

    cook till the pumpkin is tender.
  6. 6

    Sprinkle chopped fresh coriander leaves and mix well.
  7. 7

    Ambal is ready.
