- 2 tsp oil
- 1/2 tsp cumin seed
- ½ tps fenugreek seeds
- 1 - 2 kashmiri dry red chilli
- 2 tsp chopped ginger
- 1 tsp turmeric powder
- ½ tsp red chilli powder
- 250 gm pumpkin
- 3 tsp gaggery
- 4 to 5 tbsp tamarind paste
- 1 tbsp fresh coriander leaves
- Heat oil and add, fenugreek seeds, kashmiri dry red chilli, chopped ginger, turmeric powder, salt and red chilli powder.
- Add pumpkin cubes and saute.
- Water as needed and cook the pumpkin.
- Add jaggery, tamarind paste and saute.
- cook till the pumpkin is tender.
- Sprinkle chopped fresh coriander leaves and mix well.
- Ambal is ready.
