Khajur aur Puaa

Chef Ajay Chopra shares the recipes for two traditional sweets made usually during Kumaoni weddings. Khajur is a deep-fried sweet pastry, and Pua is a fried semolina sweet fritter. Both these sweets are truly decadent.

INGREDIENTS

  • 1 cup jaggery
  • 1/2 cup water
  • 1 cup whole wheat flour
  • 1/2 tsp fennel seeds
  • 1/2 tsp fennel powder
  • Milk as required
  • FOR Puaa
  • 1 cup thick semolina
  • 1 tsp crushed green cardamom
  • 1/2 cup sugar
  • 1/2 cup curd
  • 100 ml milk garnish

HOW TO PREPARE KHAJUR AUR PUAA

  1. 1

    In a heated pan, add jaggery, water and leave it to melt.
  2. 2

    In a bowl, add whole wheat flour, fennel seeds, fennel powder, jaggery syrup, milk as required and prepare a soft dough.
  3. 3

    Roll out the dough into a sheet and cut it into a rhombus shape Deep fry it until it turns crispy.

    For Puaa, in another bowl, add thick semolina, crushed green cardamom, sugar, curd, milk and mix it well.
  5. 5

    Using hands drop the small portion of batter in oil Let it cook until it turns golden brown.
  6. 6

    Garnish with rose petals and serve.
