INGREDIENTS

  • For first marination
  • 2 pieces of chicken thigh
  • salt
  • oil
  • 1 tsp turmeric powder
  • For second marination
  • 1 cup yogurt
  • salt
  • 2 tsp red chilli powder
  • 2 tsp kashmiri red chilli powder
  • 2 tsp coriander powder
  • 2 tbsp roasted cumin powder
  • 1 chopped onions
  • 2 tbsp lemon juice
  • 2 tbsp chopped garlic
  • oil
  • For mixture
  • 2 packets multani miti
  • salt
  • water
  • 1 banana leaf
  • 1 tsp butter
  • lemon wedges
  • purple tomato wedges
  • sage powder
  • mint macro greens
  • all spice powder.

PREPARATION

    Score chicken and put salt, oil, turmeric powder and keep for 4 - 5 minutes.

    In a another bowl add yogurt, salt, red chilli powder, 2 tsp kashmiri red chilli powder, 2 tsp coriander powder, 2 tbsp roasted cumin powder, chopped onions, lemon juice, chopped garlic, oil and mix marinate, put the marination in chicken, keep it for 15 minutes.

    For En Papillote: Mix multani mitti, salt and water, apply butter on banana leaf.

    Put marination and marinated chicken.

    # Fold the side and wrap the banana leaf, apply the multani mitti mixture.

    Place the parcel on a baking tray.

    Cook on coal for 45 minutes.
  8. 8

    Serve with lemon wedges, purple tomato Wedges.

    Sage powder, Mint macro greens, all spice powder.
