INGREDIENTS

  • 1 Onions
  • ¼ tsp Mustard seeds
  • 2 Dry red chillies
  • 6 Curry leaves
  • 1 /2 tbsp finely chopped garlic
  • 1/2 tbsp Ginger
  • 1 tbsp Green Chillies
  • 200 gms Potatoes
  • 250 gms Mixed vegetable(Carrot, beans diced)
  • 7 Caluliflower florets
  • 1 tbsp Cashew nut paste
  • 500 ml Thin Coconut Milk
  • 250 ml Thick Coconut Milk
  • 1 tbsp Coconut Oil
  • Salt1
  • For the Masala Powder
  • ½ tsp Black pepper corns
  • 3 cloves
  • 1 Cinnamon Sticks
  • 1 tsp Fennel seeds
  • 1 tsp Coriander powder

PREPARATION

    Blend all the dry masala ingredients into a fine powder.

    Chop onions.
  3. 3

    Heat coconut oil in a pot; add mustard seeds, Dry red chillies, curry leaves and onions.

    Add garlic, ginger, green chillies.
  5. 5

    Fry till light golden brown in colour.
  6. 6

    Add the potato cubes along with all the vegetables, add thin coconut milk.
  7. 7

    In a bowl, mix the crushed powder along with the thick coconut milk and the cashew nut paste.

    Once the gravy starts to boil add the prepared coconut mixture and bring to a boil.

    Add salt.

    Serve with neer dosa.
