Wash rice and keep aside. Finely chop garlic and onion, French beans, carrot, brinjal, tomato, and green chillies. Heat oil in a pan. Add mustard seeds and cumin seeds. When the seeds splutter, add curry leaves, chopped green chillies, garlic, and onions. Saute well. Season with asafoetida, turmeric powder, and garam masala. Mix well. Add the chopped vegetables to this masala. Mix green peas too. To the vegetables, add the soaked rice. Toss it to get a good mix of vegetables and rice. Pour water in the rice. Add a pinch of salt and give a final mix. Cover the pan and simmer. Finally, add some chopped fresh coriander to give the khichdi a refreshing flavour. Garnish khichdi with a coriander sprig and serve with rice papad.
