INGREDIENTS

  • 1 cup jackfruit
  • chopped and boiled in turmeric water
  • 3 to 4 tbsp vegetable oil
  • 1 cinnamon stick
  • 3 bay leaves
  • 4 black cardamoms
  • 8 to 10 green cardamoms
  • 1 cup sliced onions
  • 2 tsp ginger garlic paste
  • 1 cup chopped tomatoes
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • salt to taste
  • water
  • 1 tsp onions
  • fried
  • 1 tsp coriander
  • finely chopped
  • 1 tsp mint
  • finely chopped
  • 1 cup
  • For ServingRaita
  • Papad
  • For Garnish fried Onions
  • chopped mint leaves chopped coriander
  • Cashew nuts and almonds

HOW TO PREPARE KATHAL KE BIRYANI

  1. 1

    Heat vegetable oil in a pan.
  2. 2

    Add cinnamon stick bay leaves, black and green cardamoms and roast well.
  3. 3

    Add the sliced onions and fry till they turn golden brown in colour.
  4. 4

    Add ginger garlic paste and fry with the onions.
  5. 5

    Then add finely chopped tomatoes and mix well.
  6. 6

    Add the garam masala, coriander powder, red chilli powder, turmeric powder and salt.
  7. 7

    Mix well and add water.
  8. 8

    Add the boiled jackfruit pieces and mix well with the masala.
  9. 9

    In a bowl, add the fried onions, finely chopped coriander and finely chopped mint leaves.
  10. 10

    Add some cooked rice and then the prepared gravy.
  11. 11

    Make one more layer of rice and then turn the bowl upside down on a plate.
  12. 12

    Garnish with fried onions, finely chopped mint and coriander leaves and the dry fruits.
  13. 13

    Serve hot with raita and papad.
