Kancha Kofta
A mouth watering dessert made with bread slices and ghee. It is rich in taste and flavourful.

INGREDIENTS

  • 8-10 bread slices
  • 1 cup strawberries, chopped
  • 2 tbsp lemon juice
  • 4 tbsp sugar
  • ½ cup clarified butter
  • ½ cup milk
  • ½ cup condensed milk solids
  • 1 tbsp sugar
  • ¼ tsp saffron, soaked in lukewarm water
  • 3 tbsp condensed milk
  • ½ cup whipped cream
  • FOR garnish
  • Pistachios finely chopped
  • Strawberry

HOW TO PREPARE KANCHA KOFTA

  1. 1

    Using a round cutter, cut the bread slices into circles.
  2. 2

    In a pot, add chopped strawberries, lemon juice and sugar.
  3. 3

    Cook till the strawberry softens.
  4. 4

    Cool the mixture and blend until a smooth puree is formed.
  5. 5

    In a pan, heat clarified butter.
  6. 6

    Fry the bread till it turns golden brown.
  7. 7

    In another pan, add milk, condensed milk solids and sugar.
  8. 8

    Cook till the mixture thickens slightly.
  9. 9

    Add saffron soaked in warm water.
  10. 10

    Mix well and add condensed milk and stir well again.
  11. 11

    Strain the mixture and freeze for some time.

    The rabdi is ready.

    Mix whipped cream and some rabdi.
  14. 14

    Fill the mixture in a piping bag with a nozzle.
  15. 15

    Apply some rabdi on the bread pieces.
  16. 16

    Using the piping bag, top the bread pieces with the whipped cream mixture.
  17. 17

    Garnish with some chopped pistachios and sliced strawberry serve with our strawberry couli.
