  • 1 tsp olive oil
  • 1 cup sliced mushrooms
  • ½ cup pearl onions
  • ½ cup chopped garlic
  • For chicken:
  • 1 tsp olive oil
  • 2 tbsp butter
  • 500 gm chicken
  • 2 tbsp cognac
  • 1 tbsp refined flour
  • 2-3 tbsp red wine
  • 50 ml chicken stock
  • ½ cup tomato puree
  • 1-2 thyme sprigs
  • 2 bay leaves
  • salt to taste
  • Crushed black pepper for garnish

    Heat oil in a pan.

    Add butter and then the chicken pieces.
  3. 3

    Cook until the chicken becomes brown from all sides.
  4. 4

    Add Cognac and cook till it evaporates, thus adding a nice sweetness to the chicken.

    Shift the chicken to a stew pot and simmer on a low flame.

    Add refined flour and fry well till the refined flour is cooked.

    Add red wine, chicken stock, tomato puree, thyme sprigs, bay leaves, salt and crushed black pepper.

    Heat olive oil in a pan.

    Add the sliced mushrooms and then add them to the pot.

    Add pearl onions and chopped garlic.

    Toss and add them to the stew pot.

    Allow the chicken in the stew pot to cook.

    Decorate the plate with the carrot puree and serve the chicken along with the puree.

    Garnish with fried carrots and french beans.
