  • FOR the suppli
  • 1 cup leftover cooked rice
  • 2 tbsp Parmesan cheesegrated
  • 2 tbsp processed cheese
  • 1 tbsp onionsfinely chopped
  • 2 tsp tomato paste
  • 2 tsp breadcrumbs
  • 1 tsp green chillies chopped
  • 1 tsp ginger chopped
  • 1 tbsp oil
  • FOR the stuffing
  • Jalapeno chillies as required chopped
  • Mozzarella cheese as requiredgrated
  • Eggsbeaten
  • breadcrumbs
  • FOR the pickled chilli
  • 1 tbsp oil
  • 1 tbsp garlic chopped
  • 3big green chilliesslit into half
  • 1 tsp sesame seeds
  • 1 tsp nigella seeds
  • Salt to taste
  • Black pepper to tastecrushed
  • 2 tsp fresh thyme leaves
  • 1wedgelemonjuiced
  • Water as required
  • FOR garnish
  • Sundried tomato sauce
  • A pinch of red chilli powder

    Take the leftover rice in a bowl and mash it well.

    Add Parmesan cheese, processed cheese, finely chopped onions, and tomato paste, and mix them well.

    Bind the mixture with breadcrumbs and add chopped green chillies and ginger.
  4. 4

    Make small balls of the mixture and stuff them with chopped chillies and grated mozzarella cheese.
  5. 5

    Seal them well and make tikkis.
  6. 6

    Now coat the tikkis first with beaten eggs and then with breadcrumbs.

    Heat 1 tbsp oil in a pan and shallow fry the tikkis.
  8. 8

    For the pickled chilli, heat 1 tbsp oil in another pan.

    Add 1 tbsp chopped garlic and fry.
  10. 10

    Add the big, slit green chillies to the pan and fry well.
  11. 11

    Add sesame seeds, nigella seeds, salt, and crushed black pepper, to taste.

    Now add little water and fresh thyme leaves.

    Add lemon juice, mix it well and switch off the gas.
  14. 14

    Garnish with sundried tomato sauce and red chilli powder.
  15. 15

    Serve the chillies and the rice cake.
