Roesti Potatoes Recipe by Chef Maria Goretti

INGREDIENTS

  • FOR Roesti Potatoes
  • 250 gm grated raw potatoes
  • 100 gm grated raw carrots
  • 100 gm green peas
  • 1 tsp mustard paste
  • 1 tbsp breadcrumbs
  • 1 tbsp olive oil
  • 1 tsp white wine vinegar
  • black pepper powder
  • 1 tsp lemon juice
  • 20 gm gruyere cheese
  • 1-2 tbsp olive oil
  • .;
  • FOR Salad
  • 1 tbsp olive oil
  • 1 tsp white wine vinegar
  • ½ tsp mustard paste
  • 1 tsp lemon juice
  • black pepper powder
  • 10-12 baby spinach
  • 1-2 cherry tomatoes
  • 1 egg

HOW TO PREPARE IRISH FLAT BREAD

    Procedure to make Roesti potatoes: Strain the grated potatoes in a bowl.

    Add grated raw carrot, green peas and mix it well.
  3. 3

    Add mustard paste, chilli flakes, breadcrumbs, olive oil, white wine vinegar, black pepper powder and mix it well.
  4. 4

    Add lemon juice, salt, gruyere cheese.
  5. 5

    In a pan add olive oil, roesti mix.
  6. 6

    Cover it with breadcrumbs, sprinkle olive oil and bake it in a preheated oven at 215' C for 15 - 20 minutes.

    In a bowl add olive oil, white wine vinegar, mustard paste, lemon juice and mix it well.

    Add black pepper powder and mix it well.

    Cut the slice of baked roesti.
  10. 10

    Add baby spinach into the bowl and toss it.
