  • 4 to 5 dry red chillies
  • 10 to 12 garlic cloves
  • 50 ml of malt vinegar
  • 2-inch ginger
  • 1 tsp cumin
  • 1 tsp black Pepper
  • salt as per taste
  • ½ tsp turmeric
  • 500 gm pork
  • pinch of saffron

    In a bowl, take dry red chillies, chopped garlic, malt vinegar, ginger, cumin seeds, black pepper, salt, turmeric and keep it aside until the chillies soften. Grind the spices and add it in a bowl.

    In another bowl, add pork, garlic - chilli paste, salt and mix all the ingredients well and keep it for a minimum 8 hours for marination.

    In a pan, add oil, pork and stir it. Add the stock and let it cook. Add salt as per taste and mix it well. Add saffron strands and mix.

    Serve Indyal with Fugias.
