  • 2 tbsp ghee
  • 4 cardamoms
  • 3 - 4 black peppercorns
  • 3 - 4 cloves
  • 1 cinnamon stick
  • 1 - 2 tsp finely chopped garlic
  • 1 tsp finely chopped ginger
  • curry leaves
  • 4 - 5 slit green chillies
  • 1 cup sliced onion
  • salt as per taste
  • 1 cup diced bottle gourd
  • 1 cup diced pumpkin
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup coconut milk
  • 1 - 2 cup rice flour
  • oil

    In a heated pan, add ghee, cardamoms, black peppercorns, cloves, cinnamon stick and saute.

    Add finely chopped garlic, ginger, curry leaves, slit green chillies, sliced onions and saute.
  3. 3

    Add salt as per taste and mix it. Add diced bottle gourd, diced pumpkin, carrots, potatoes and mix it. Add water, coconut milk and let it cook.

    In a bowl, add rice flour, salt as per taste, oil, water and prepare a soft dough.

    Add the dough in a mould and make noodles of it on a banana leaf. Steam it for 10 - 12 minutes. Serve the Iddiappam with hot stew..
