  • 1 tbsp olive oil
  • 1 onion
  • 1 tbsp garlic
  • 1 yellow zucchini
  • 1 cauliflower
  • 1 carrot
  • 1 celery
  • 1 cup vegetable stock
  • salt to taste
  • 1 cup tomato paste
  • 2 tbsp boiled kidney beans
  • 2 tomatoes
  • Few basil leaves
  • black pepper powder to taste
  • For Whole Wheat Pasta: ½ cup Wheat flour
  • 1 egg
  • salt to taste
  • For Garnish: Parmesan cheese
  • basil leaves

    For minestrone soup heat olive oil in a pan.
  2. 2

    Add crushed garlic chopped onion, yellow zucchini, cauliflower, carrot, celery, salt, vegetable stock, and tomato paste.

    Mix well.

    For whole wheat pasta, knead a dough with wheat flour, egg, and salt.
  5. 5

    Make small balls from the dough and flatten them with a rolling pin.
  6. 6

    Roll this flattened dough.
  7. 7

    Cut the roll into a noodles.
  8. 8

    Uncoil the noodles and add to the soup.
  9. 9

    Add boiled kidney beans, blanched tomatoes, basil leaves, and black pepper powder to the soup.

    Stir well.

    Garnish the soup hot with parmesan cheese shavings and basil leaves.
