INGREDIENTS

  • 2 onions
  • 1 tbsp ghee
  • 1 tbsp butter
  • 1 tbsp ginger
  • 4 green chillies
  • 200 gm turnips
  • 1 tbsp sambar masala
  • 2 tbsp kashmiri red chilli powder
  • 1 tbsp all spice powder
  • 1 tbsp coriander powder
  • 1 tbsp turmeric
  • water as required
  • fresh coriander
  • 2 tbsp jaggery
  • 2 tbsp lemon juice
  • 2 inch ginger
  • cumin powder

PREPARATION

    Heat ghee and butter in a pan and add finely chopped ginger, green chillies, onions, turnips and saute.

    In a bowl, mix Kashmiri red chilli powder, sambar masala, all spice powder, coriander powder, turmeric powder and water. Pour the mixture into the pan and saute. Add finely chopped coriander leaves and mix well.

    In a bowl mix jaggery, lemon juice and finely chopped coriander leaves. Add the jaggery mixture, water and mix again.

    Chop slices of ginger and add lemon juice on it. On the sigdi, char the green chillies. Garnish the gurwale shalgam with the ginger slices, coriander leaves, cumin powder, charred green chilli, red chilli powder and serve.
