Gurwale Shalgam
Turnips are known for it high content in vitamins, fibre and minerals. Gurwale Shalgam has all the necessary spices in it for a lip-smacking main course. This can be served with rice or roti.

  • For Gurwale Shalgam: 2 onions
  • 1 tbsp ghee
  • 1 tbsp butter
  • 1 tbsp ginger
  • 2 green chillies
  • 200 gm turnips
  • 1 tbsp sambar masala

    Procedure to make Gurwale Shalgam: Finely chop onions.

    In a heated pan add desi ghee, butter and let it melt.

    Add finely chopped ginger, green chillies, onions and let it cook until it turns light brown.

    To the onions add chopped turnips and toss it.

    In a bowl add Kashmiri red chilli powder, sambar masala, allspice powder, coriander powder, turmeric powder, water and mix it well.

    To the turnips add masala and let it cook.

    Add finely chopped coriander leaves and stir it.

    In a bowl add jaggery, lemon juice and finely chopped coriander leaves.

    In the pan add water, jaggery mixture and mix it well.

    Chop slices of ginger and add lemon juice to it.

    On the sigdi char the green chillies.

    In a bowl add Shalgam.

    To garnish add ginger, coriander leaves, cumin powder, green chilli, red chilli powder and Gurwale Shalgam is ready to serve.
