INGREDIENTS

  • FOR For Grilled Tofu:2 tbsp chopped mint leaves salt 1 tsp turmeric powder 1 tsp paprika powder olive oil 1 tbsp lemon juice 200 gm tofu: For Pineapple Salsa:½ chopped pineapple salt 1 tsp cinnamon and nutmeg powder 1 tbsp mixed herbs 1 tbsp pickled jalapenos 5 garlic cloves 2 tbsp brown sugar 1 tbsp olive oil
  • :For Coconut Rice:
  • 1 onion
  • 1 cup rice
  • ½ red bell pepper
  • ½ yellow pepper
  • few mint leaves
  • ½ cup grated coconut
  • 1 cup water
  • salt
  • 2 tbsp coconut milk
  • 2 tbsp olive oil
  • 1 tbsp coconut oil
  • 2 tbsp coconut milk

HOW TO PREPARE GRILLED TOFU, COCONUT RICE & PINEAPPLE SALSA

    Procedure to make Grilled tofu, Coconut rice & pineapple salsa: In a bowl add chopped fresh mint leaves, salt, turmeric powder, paprika powder, olive oil, lemon juice and whisk it.

    Marinate the tofu with the mixture.

    In a bowl add chopped pineapple, salt, lemon juice, cinnamon & nutmeg powder and dried mixed herbs.

    Add pickled jalapenos, chopped garlic, brown sugar and mix it well.

    Add olive oil and mix it again.

    In a heated pan add olive oil, finely chopped onions and let it cook.
  7. 7

    Add rice to the onions and saute.

    Add finely chopped red & yellow bell pepper, mint leaves and grated coconut.

    Add water, salt and let it cook.

    On a heated pan add olive and fry the marinated tofu.

    To the rice add coconut oil and let it cook.

    Add coconut milk to the rice.

    Add the tofu on a plate.

    Add rice over it and pineapple salsa.

    To garnish add mint leaves, coconut milk, paprika powder, chopped red & yellow bell pepper and Grilled tofu, Coconut rice & pineapple salsa is ready to serve.
