INGREDIENTS

  • For grilled prawns
  • 250 gm prawns
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt as per taste
  • 1/2 tsp crushed black pepper
  • For paprika hollandaise
  • 2 egg yolks
  • 2 tbsp lemon juice
  • 1 tbsp melted butter
  • salt as per taste
  • 1 tsp paprika powder
  • For garnish
  • paprika powder
  • mint leaves
  • lemon slices

PREPARATION

    In a bowl, add prawns, olive oil, lemon juice, salt as per taste, crushed black pepper and mix it well.

    In a bowl, add egg yolks, lemon juice and whisk it well until it doubles up in volume. Add water in a pan and let it heat. In another pan, add the egg mixture. Keep the egg mixture over the heated water and whisk it until it turns light and fluffy.

    Add melted butter and mix it well. Cook it until it turns thick. Add salt as per taste, paprika powder and mix. Grill the marinated prawns in a heated pan.

    Garnish with mint leaves, paprika powder, lemon slices and serve with hollandaise sauce.
