INGREDIENTS

  • FOR Gooler ke kebab:
  • 100 grams boiled cluster fig
  • 1 tsp finely chopped ginger
  • 1/2 tsp clove powder
  • 1 tsp finely chopped garlic
  • 1/4 tsp chopped green chilli
  • Salt as per taste
  • 1/4 tsp turmeric powder
  • For binding: 3 tbsp roasted Bengal gram powder
  • 1/2 tsp clarified butter
  • FOR Kebab
  • 1 tbsp clarified butter
  • 1 - 2 boiled cluster figs
  • FOR Chutney
  • 1/2 cup chopped grapes
  • 1/4 tsp red chilli powder
  • Salt as per taste
  • 1 tbsp Honey
  • 1/2 tbsp chopped ginger
  • Coriander leaves
  • 1 edible flower

HOW TO PREPARE GOOLER KE KEBAB

  1. 1

    Make a thick paste of cluster fig in a mixer jar.
  2. 2

    In a bowl, add cluster fig paste, finely chopped ginger, clove powder, finely chopped garlic, green chilli, salt as per taste, turmeric powder.

    Add roasted Bengal gram powder, clarified butter mix it well and leave it to rest for 5 minutes.

    For preparing chutney, in a bowl, add chopped grapes, red chilli powder, salt as per taste, honey, chopped ginger, coriander leaves, edible flower and mix it well.

    To make the kebab, add clarified butter and let it heat.

    Dip hands in the water, and roll and prepare kebabs from the batter.
  7. 7

    Cook the kebab in the pan until it turns dark brown from both the sides.
  8. 8

    In the same pan, fry boiled cluster figs by pouring clarified butter.
  9. 9

    Garnish with fried cluster figs, spring onion and serve the Gooler ke Kebabs with grapes chutney.
