Ghutvan Gobhi

The Baniya community in Delhi makes some special dishes during their weddings. One of them is Ghutvan Gobhi which is popularly consumed with urad dal kachori. Chef Ajay Chopra shares the traditional recipe for this dish.

INGREDIENTS

  • FOR ghutvan gobhi
  • 1 tbsp oil
  • 1 tbsp cumin seeds
  • 1 inch chopped ginger
  • 1 chopped green chilli
  • 1/2 kg cauliflower florets
  • salt
  • 1/2 tbsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tbsp red chilli powder
  • water
  • FOR urad dal ki kachori
  • soaked urad dal
  • ghee
  • cumin seeds
  • ginger
  • green chilli
  • asafoetida
  • turmeric powder
  • red chilli powder
  • salt
  • coriander leaves
  • dry mango powder
  • wheat flour dough
  • oil for frying
  • FOR Garnish
  • juliennes of carrots
  • fresh coriander leaves

HOW TO PREPARE GHUTVAN GOBHI

  1. 1

    In a heated pan add oil, cumin seeds and let it roast.
  2. 2

    Add chopped ginger, green chilli, cauliflower florets and mix it.
  3. 3

    Add salt as per taste, turmeric powder, coriander powder, red chilli powder, water and let it cook.
  4. 4

    Add garam masala and mix it well.
  5. 5

    For Urad Dal ki Kachori, in a heated pan add ghee, cumin seeds, ginger, green chilli, asafoetida, salt as per taste, turmeric and red chilli powder.

    coriander leaves, dry mango powder and soaked Urad Dal.
  7. 7

    Stuff the mixture in wheat flour dough and roll it out.
  8. 8

    Fry the Kachori in medium hot oil until it turns crispy.
  9. 9

    Garnish the Ghutvan Gobhi with fresh coriander leaves, juliennes of carrots and, it is ready to serve hot.
