  • 1 cup rice flour
  • 1 cup wheat flour
  • 1 tsp baking powder
  • water as required
  • salt to taste
  • black pepper powder to taste
  • 4 to 5 tbsp muskmelon puree
  • 4 to 5 tbsp pineapple puree
  • 4 to 5 tbsp kiwi puree
  • 4 to 5 tbsp banana puree
  • oil as required
  • 10 to 12 cubes watermelon
  • For Garnish: Apple slices

    For the uttapam batter, in a mixing bowl, mix rice flour, wheat flour, baking powder, water, salt, black pepper powder, muskmelon puree, pineapple puree, kiwi puree, and banana puree.

    Make sure there are no lumps in the batter.

    In a pan, heat oil.

    Pour the batter using a ladle to make small uttapams.

    Add watermelon cubes on each uttapam while cooking.

    Cook from both the sides until golden brown.

    Transfer the uttapams to the serving plate.
