Heat a pan and add rajgira. Cover with a lid and allow the rajgira to pop. Set aside the popped rajgira in a bowl. Heat another pan and melt the jaggery. Add the popped rajgira and mix well. Grease a plate with oil and spread the mixture. Allow it to cool. Cut three different sizes of chikki using three different ring cutters. To make the fruit tower, pipe out whipped cream over the largest chikki ring as the base and then top with strawberries, cherries, raspberry puree, and blueberries. Drizzle with chocolate sauce and strawberry crush. On this place the medium sized chikki ring and repeat the process. Place the smaller sized chikki over the medium sized chikki and pipe out the whipped cream on the top. Drizzle with strawberry crush and chocolate sauce. Garnish with a mint leaf.
