Fish with Sichuan Pepper

  • 2 Basa fish fillets
  • 2 tbsp dark soy sauce
  • 2 pinch Sichuan pepper powder
  • 2 tsp roasted cumin seeds
  • 1 tsp chilli flakes
  • Salt
  • 1 tsp Oil for coating
  • 2 tsp Oil for frying
  • 1 tsp pepper powder
  • Spring onion shoots
  • 1 carrot

    Marinate fish with dark soy sauce and Sichuan pepper powder.
  2. 2

    For the spice mix, mix pepper, dry roasted and ground cumin seeds, and chilli flakes.

    Coat the fish with this spice mix and sprinkle salt.
  4. 4

    Gently massage the spice mix on the fillet to penetrate spices into the flesh.

    Drizzle 1 tsp oil on the fish so that the spice mix adheres to the fillet.

    Pre heat an oven at 180 C and cook for 5 min.

    You can also pan sear the fish by heating oil and cooking for 2 min on each side, or until fish is cooked.

    For garnish, carve a flower from the carrot and decorate with spring onion greens.

    Serve hot.
