INGREDIENTS

  • 1 Pomfret
  • For Marinade: 2 to 3 tbsp lemon juice
  • 1 to 2 tbsp mustard sauce
  • black pepper powder as required
  • salt to taste
  • For Green: olive oil as required
  • 1 to 2 tsp chopped garlic
  • 1 cup broccoli blanched
  • 8 to 9 pak choy leaves
  • ½ cup blanched French beans
  • 7 to 9 spinach leaves
  • black pepper powder as required
  • salt to taste
  • For Sauce: olive oil as required
  • 1 to 2 tsp chopped garlic
  • 1 to 2 tsp ginger juliennes
  • 2 tbsp oyster sauce
  • 4 to 5 tbsp corn flour and water mixture
  • salt to taste
  • water as required
  • For Garnish: Lemon wedges

PREPARATION

    For the fish marinade, mix lemon juice, mustard sauce, salt and black pepper powder in a bowl.

    Using a brush, apply this marinade on all sides of the fish and steam the fish in the steamer.

    Heat olive oil in a pan and saute chopped garlic. Add blanched broccoli, bok choy leaves, blanched French beans, spinach leaves, salt, black pepper powder and mix well.

    In another pan, heat olive oil and add chopped garlic, ginger juliennes, oyster sauce and mix well.

    Make a cornflour and water slurry and add it to the sauce. Stir well till the sauce becomes thick.

    Pour the sauce on a serving plate. Place the steamed fish and the greens on the top of the fish. Garnish it with lemon wedges.
