  • FOR Eekh ka Paratha
  • 1 cup boiled and mashed sweet potatoes
  • 1 tsp chopped mint leaves
  • 1 tsp chopped coriander
  • 2 to 3 tsp finely chopped onion
  • salt to taste
  • ½ tsp red chilli powder
  • ½ tsp chaat masala
  • Millet flour for dusting
  • ½ tsp clarified butter
  • FOR Dough
  • 1 cup millet flour
  • sugarcane juice
  • salt to taste
  • FOR Garnish
  • Mint sprigs
  • FOR Serving
  • Yogurt

HOW TO PREPARE EEKH KA PARATHA

    In another bowl add the boiled and mashed sweet potatoes, finely chopped green chillies, mint leaves, coriander, and onion, salt, red chilli powder and chaat masala.

    Mix well.
  3. 3

    Divide the dough into small portions and stuff with the prepared mixture.
  4. 4

    Seal properly.
  5. 5

    Dust the pearl millet flour and shape like a paratha with your hands.
  6. 6

    Heat clarified butter in a pan.
  7. 7

    Cook the parathas on both sides.
  8. 8

    Cut triangles from the paratha and arrange in a plate.
  9. 9

    Serve with yogurt and garnish with mint sprigs.
