  • FOR Full Medames
  • 1 cup Fava Beans
  • 1 cup Fava Beans
  • 100 ml Stock
  • To taste Salt
  • Few sprigs Garnish
  • 1 lemon wedge
  • 1tsp Chilli Flakes
  • 2tbsp Feta Cheese
  • 1tsp Garlic
  • .
  • FOR Dukkah
  • 1 tbsp Cumin Seeds
  • 2 tbsp Coriander Seeds
  • 2 tbsp Sesame Seeds
  • 2 tbsp Hazelnuts
  • 1 tbsp Pistachios
  • 3 pcs Pita Bread
  • As Needed Olive Oil

    For Full Medames, In a pan add fava beans, pour water and add salt, cover the pan and let the beans get semi softened.

    Once done remove the beans, chop them and keep aside.

    In another pan add cooked Fava beans, salt , stock and mash the beans with help of spatula and cook till done.

    Remove Full in a serving bowl, add the chopped semi cooked fava on top followed by parsley sprigs, lemon wedges, chilli flakes, feta cheese and chopped garlic.

    For Dukkah ,In a pan, add 1 tbsp cumin seeds, 2 tbsp coriander seeds and 2 tbsp sesame seeds and let it crackle.

    Add 2 tbsp hazelnut, 1 tbsp pistachios and toss.

    Coarsely grind the spices together in a mixer.
  8. 8

    Slice pita bread in half, pour olive oil on pita, sprinkle Dukkah and pour more olive oil and toast pita till crisp.

    Serve Dukka topped toasted Pita bread with Full Medames.
