Chef Pallavi Nigam Sahay shares a traditional Indian recipe of Dhuska with Yam Chutney. Dhuska is made by grinding soaked rice with vegetables, seasonings and spices and then deep-fried. This disc-shaped crispy and delicious Dhuska is full of proteins and, and when eaten with yam chutney is the most comforting food around.
In a blender jar, add soaked rice, split Bengal gram, grated ginger, chopped garlic, black peppercorns. Add chopped green chilli, turmeric powder, garam masala and prepare a paste.
Add the batter in a bowl. Add oil in a pan and let it heat.
For chutney, add boiled yam in a bowl. Add mustard oil and mash the yam. Add black salt as per taste, celery, grated ginger, black cumin, chopped coriander leaves. green chillies. Add chopped solves, lime juice, garam masala and mix it. Mash the yam nicely.
Deep fry the dhuska in the oil until it turns golden. Garnish with coriander leaves and serve.
