Dhansakh

Dhansak, a Parsi meat-based dish is famous all over India. This dish is a combination of dals, vegetables and meat and is flavoured with freshly ground spices. This spicy stew is supremely delectable.

INGREDIENTS

  • mutton
  • ginger paste
  • garlic paste
  • salt
  • chopped brinjals
  • chopped yam
  • chopped spring onion
  • fenugreek leaves
  • soaked red lentils
  • soaked toor dal
  • coriander
  • turmeric powder
  • fennel seeds
  • cardamom
  • cumin
  • black cardamom
  • cinnamon stick
  • pupri
  • jaggery
  • ghee
  • cracked mustard seeds
  • curry leaves

HOW TO PREPARE DHANSAKH

    In a bowl, add mutton and marinate it with the paste of ginger and garlic. In another bowl, add chopped brinjals, yam, spring onion. Add fenugreek leaves.

    Add soaked red lentils, toor dal and mix it. In a heated pan, add water and the mixture of dal and vegetables. Add the marinated meat and mix it.

    Add turmeric powder, salt as per taste, water and let it cook.

    Prepare a paste of coriander seeds, cumin seeds, fennel seeds, cardamom seeds, black cardamom, cinnamon stick, pupri. Chop the jaggery.

    Add the chopped jaggery into the curry and mix it. Remove the meat from the curry and add it in the bowl. Blend the dal and add the mutton back.
  6. 6

    In another pan, add ghee and let it melt. Add cracked mustard seeds, curry leaves and mix it. Add the powdered masala and mix. Pour the tadka into the dal and let it cook.
  7. 7

    Serve the Dhansakh hot.
