INGREDIENTS

  • 1 yellow squash
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 eggplant
  • ½ onion
  • 2 tbsp Olive oil
  • 1 tbsp garlic cloves, chopped
  • 1 orange chilli, chopped
  • 2 cherry tomatoes, chopped
  • 2 tbsp tomato puree, Few oregano leaves, Few basil leaves, Few parsley, chopped, Crushed black pepper, to taste
  • 2 tbsp lentil dal, soaked
  • 2-3 tbsp khuskhus, Salt to taste, Water as required
  • FOR garnish
  • basil leaves
  • Olive oil

PREPARATION

    Chop yellow squash, green bell pepper, red bell pepper, eggplant, and onion.

    Heat olive oil in a pan.
  3. 3

    Saute chopped onion, garlic cloves, orange chilli, vegetables, salt, and crushed black pepper.
  4. 4

    Mix these with chopped cherry tomatoes, tomato puree, few oregano leaves, basil leaves, and roughly chopped parsley.

    Add soaked lentil dal to it.

    Mix well with some water.
  7. 7

    Add khuskhus.
  8. 8

    Once cooked, transfer to a serving bowl and garnish with basil leaves and olive oil.
