Parmesan Chicken Rice

INGREDIENTS

  • 1 cup brown rice
  • 4-5 garlic cloves, finely chopped
  • 1 Onion, finely chopped
  • 1 chicken breast, sliced
  • 2 tbsp extra-light olive oil
  • ½ tbsp thyme sprigs, Crushed black pepper to taste
  • 2 tbsp white wine
  • 1 tbsp olive oil (for greasing)
  • 4 tbsp cream
  • 1 cup chicken stock
  • 7-8 tbsp Parmesan cheese, grated, Salt to taste, Water as required
  • FOR garnish
  • Coriander sprig

PREPARATION

    Heat water in a pan and add rice.

    Let it boil and then sieve.
  3. 3

    Heat olive oil in a pan.
  4. 4

    Add finely chopped garlic cloves and saute lightly.
  5. 5

    Add finely chopped onions, thyme sprigs, sliced chicken breast, salt, crushed black pepper, and white wine.

    Mix.

    Grease a baking tray with olive oil.
  8. 8

    Add a layer of rice and then another layer of cooked chicken.
  9. 9

    Add cream and chicken stock to the same pan of cooked chicken.

    Mix and heat.

    Add this to the tray.
  12. 12

    Top with grated parmesan cheese.
  13. 13

    Bake at 180 C for 10 to 12 min.
  14. 14

    Garnish with coriander sprig and serve hot.
